Breakfast: Summer Berry Smoothie Bowl

Lately, I've been kick-starting my warm summer mornings with these refreshing and nutritional smoothie bowls. Throughout my life I have never been a big fan of breakfast - I spent most of my teenage years waking up late, skipping breakfast and heading out for the day. For some reason breakfast just didn't appeal to me.
The past few months I have been searching through Instagram and Pinterest to find inspiration for meals. I've been amazed by the beauty that can be created by assembling different plants together. That's the wonderful thing about plant-based meals, the various colours of the fruits/vegetables harmonise, and the combination of flavours blend together.
I started to see these smoothie bowls all over Instagram and Pinterest. Now, I am a massive lover of fruit, so I immediately knew that this was something I would have to try out. These smoothie bowls are essentially banana ice cream, (no milk, of course) blended with any fruit of your choice. I know what you're thinking, eating ice cream for breakfast is crazy! But these are homemade, dairy-free and a great way to pack in tonnes of vitamins before you start your day. The perfect summertime breakfast.
