Easy Green Risotto

To me, one of the most incredible things about cooking with vegetables is how lively the colours look together. Fresh and flourishing, green vegetables not only are enticing, are also packed with nutrients.

I've been meaning to write up the recipe for this dish for ages as it's been one of my favourite meals to have for dinner lately. Up until a few months ago, I had never tried risotto, let alone a vegan risotto. In fact, I didn't even think risotto could be made vegan as I assumed it had to have milk products in it to taste good. I was honestly taken aback when I had the first mouthful, I was surprised that it tasted so amazing that I had to learn how to make it for myself.

Risotto is an awesome way to carb up and is a great meal for the end of a long day. However be prepared because this dish needs a lot of TLC and attention otherwise you could end up with a crispy risotto, yuck.

Whenever I make this risotto I feel great - not only does it taste amazing, but it fills me with a sense of pride that I managed to pull off making such an "adult" meal. Once upon a time, I was a lazy student only capable of putting ready meals in the microwave and here I am making risotto - BREAKTHROUGH.
